Royal Baby Cakes

A Victoria Sponge always goes down well at any gathering!

A slice of it is simply splendid with a cup of tea! Named after Queen Victoria, the Queen's great-great-grandmother, it is a vanilla flavoured sandwich cake layered with cream and jam & sprinkled with icing (confectioner's) sugar.

To honour the new Royal Prince, we've made mini-Victorias.

  • For the base, use your fave spngecake recipe or simply a yellow cake mix to make cupcakes.
  • When cool, cut in two vertically, and sandwich the two pieces with jam and whipped cream.
  • Sprinkle with sugar, decorate with berries and a Union Jack toothpick!
