NORWEGIAN SPAMBALLS

A variation of Swedish Meatballs by Sheela.

Recipe was created for the Hormel Corporation/British Emporium Monty Python Cooking Demo at Grapefest 2008 at the Culinary Pavilion.

Serves 6 (or 4 hungry vikings)

INGREDIENTS

For Meatballs:

  • 1 lb ground beef
  • 1 12oz can SPAM
  • 1 teaspoon chopped Garlic
  • 1 cup Breadcrumbs
  • 1 egg
  • Nutmeg
  • Freshly Ground Salt & Pepper to taste
  • Olive Oil for frying

For Sauce:

  • 2 cans (400g) Heinz Mushroom Soup
  • 4 tablespoons Sour Cream
  • 1 teaspoon Worcestershire Sauce
  • 1 Beef OXO cube

Salt & Freshly Ground Pepper to taste
To Garnish: Chopped Parsley

METHOD

Place the SPAM in a large bowl, crumble with your fingers or with a wooden spoon as best you can (it's hard to crumble pressed meat!)

Add rest of ingredients for meatballs and stir together well. Form into approx 75 small meatballs. (Hint: get any miscellaneous Vikings who are standing around your kitchen to help)

Heat oil in a large skillet, fry meatballs in batches for 10-15 minutes, or until cooked. Drain on a plate covered with a kitchen towel to absorb excess oil and set aside.

To make sauce, place sour cream in a large saucepan, slowly stir in the mushroom soup and add Worcestershire sauce. Add crumbled OXO cube and salt & pepper to taste. Carefully place meatballs in sauce and simmer until meatballs are heated through. Place in a serving dish, garnish with Parsley and serve at
once over hot noodles or your favorite pasta.

A definite crowd pleaser - even with those who 'DON'T LIKE SPAM!!'
