BRITISH EMPORIUM'S
ELDERFLOWER LEMON
CUPCAKES

This easy recipe is inspired by Harry & Meghan's choice of wedding cake. It's simple to make, and the fragrant, springtime flavours of these cupcakes will be enjoyed by the whole family. Serve them at your Royal-themed events, tea parties, showers & celebrations!

Elderflower Cordial also contains Lemon & is available at The British Emporium. It can also be used to make a refreshing non-alcoholic beverage or in cocktails.


INGREDIENTS:

FOR THE CUPCAKES:

  • 1 box Yellow Cake Mix (we used Betty Crocker 'Supermoist') and required ingredients as per directions
  • 1/2 Cup Belvoir Elderflower Cordial (Note: this is already flavored with Lemon)

FOR THE FROSTING:

  • 8 oz Cream Cheese (we used Philadelphia Original)
  • 1/4 cup English or Irish Butter, softened (available at The British Emporium)
  • 1 tablespoon Elderflower Cordial (available at The British Emporium)
  • 2 cups Confectioners' Sugar


METHOD:

FOR THE CAKE:

  • Preheat oven to 350 degrees.
  • Place baking cups into a nonstick cupcake baking pan.
  • Prepare the cake mix as directed, but instead of using 1 cup of water, use 1/2 cup Elderflower Cordial mixed with 1/2 cup of water.
  • Bake 24 cupcakes with the mixture.
  • Leave to cool on a wire rack.

FOR THE FROSTING:

  • Mix the cream cheese with the butter until light and fluffy.
  • Add Elderflower Cordial.
  • Add sugar, one cup at a time.
  • Whisk until creamy. (Note: you can add more sugar to taste).
  • Decorate cooled cupcakes with frosting and floral cake decorations.

Makes 24 cupcakes. You can also use this recipe to make a layer or sheet cake.
